Zesty Lemon Basil Chicken Salad

This zesty lemon basil chicken salad is fresh, vibrant, and full of flavor. With juicy grilled chicken, a tangy lemon dressing, and the aromatic flavor of fresh basil, this salad makes the perfect light lunch or dinner. It’s packed with protein, healthy fats, and refreshing ingredients that will leave you feeling energized and satisfied.

Ingredients:

For the Salad:

  • 2 boneless, skinless chicken breasts
  • 4 cups mixed greens (spinach, arugula, or your choice)
  • 1 cucumber, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn or chopped
  • 1/4 cup feta cheese (optional)
  • 1 tablespoon olive oil (for grilling the chicken)

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional)
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions:

Grill the Chicken:
Preheat your grill or grill pan over medium-high heat. Lightly coat the chicken breasts with olive oil and season with salt and pepper. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked. Remove from heat and let it rest for 5 minutes before slicing it into thin strips.

Prepare the Salad:
While the chicken is grilling, prepare the salad ingredients. In a large bowl, combine the mixed greens, cucumber slices, cherry tomatoes, and red onion. Toss gently to combine.

Make the Dressing:
In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, honey (if using), garlic powder, salt, and pepper. Adjust the seasoning to your taste, adding more lemon juice for extra tang or honey for sweetness.

Assemble the Salad:
Once the chicken is ready, slice it into thin strips and add it to the salad. Drizzle the lemon dressing over the salad and toss everything together until well-coated.

Garnish and Serve:
Top the salad with torn basil leaves and a sprinkle of feta cheese (if using). Serve immediately for a fresh, light, and satisfying meal.

Tips:

  • Make it Vegan: Skip the chicken and feta cheese, and add chickpeas or tofu for protein.
  • Meal Prep: Prepare the chicken and dressing ahead of time, and store them separately. Assemble the salad just before serving for a quick and easy meal.
  • Add More Veggies: You can add other vegetables like bell peppers, avocado, or olives for extra flavor.
