Ingredients

  • 2 medium sweet potatoes

  • 1 ripe avocado, diced

  • ½ cup canned black beans, rinsed and drained

  • ¼ cup red onion, finely chopped

  • 1 small tomato, diced

  • Juice of ½ lime

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Fresh cilantro (optional)


Instructions

1. Bake the Sweet Potatoes

Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, place on a baking sheet, and roast for 25–30 minutes or until fork-tender.

2. Prepare the Filling

While the potatoes bake, combine avocado, black beans, tomato, red onion, lime juice, olive oil, salt, and pepper in a bowl. Mix gently to keep the avocado chunky.

3. Assemble and Serve
