Stuffed mushrooms with cheese and herbs are the perfect appetizer or party snack. Ingredients

  • 16 medium white or cremini mushrooms

  • 1 tablespoon olive oil

  • 2 cloves garlic (minced)

  • ½ cup cream cheese (softened)

  • ¼ cup grated Parmesan cheese

  • ¼ cup shredded mozzarella cheese

  • 2 tablespoons chopped fresh parsley

  • 1 tablespoon chopped fresh chives or thyme

  • Salt and pepper to taste

  • Optional: breadcrumbs for a crispy topping


Instructions

1. Prep the Mushrooms

Preheat oven to 375°F (190°C). Clean mushrooms with a damp paper towel. Remove stems and set aside. Place caps on a baking sheet lined with parchment paper.

2. Make the Filling

Finely chop mushroom stems. In a skillet, heat olive oil and sauté the stems and garlic for 2–3 minutes. Let cool slightly. In a bowl, combine sautéed mixture with cream cheese, Parmesan, mozzarella, herbs, salt, and pepper. Mix until creamy.

3. Stuff the Mushrooms

Spoon the cheese filling into each mushroom cap, mounding slightly. Sprinkle breadcrumbs on top if using.

4. Bake and Serve

Bake for 18–20 minutes, or until the mushrooms are tender and the filling is golden and bubbly. Garnish with extra herbs and serve warm.
