  1. Slice the bell pepper into 1/2-inch rings. You should get about 4 rings from a large bell pepper.

  4. Crack an egg into the center of each bell pepper ring. Season with salt and pepper.
  5. Cover the skillet with a lid and cook until the egg whites are set and the yolks are cooked to your liking, about 3 to 5 minutes.
