Ingredients

  • 1 ½ cups pitted Medjool dates

  • 1 cup unsweetened shredded coconut

  • ¾ cup raw almonds (or cashews)

  • 1 tablespoon coconut oil

  • 1 teaspoon vanilla extract

  • A pinch of sea salt


Instructions

1. Prepare the Dates

If the dates are dry, soak them in warm water for 10 minutes, then drain well.

2. Blend the Base

In a food processor, pulse almonds until finely chopped. Add dates, shredded coconut, coconut oil, vanilla, and salt. Blend until a sticky dough forms.

3. Press and Shape

Transfer the mixture into a parchment-lined 8×8-inch pan. Press it down firmly and evenly using your hands or a spatula.

4. Chill and Slice

Refrigerate for at least 1 hour to set. Once firm, cut into bars or squares. Store in the fridge for up to 10 days.
