Ingredients

  • 2 cups elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour (for coating)
  • 2 eggs, beaten
  • Vegetable oil, for frying

Instructions

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  3. Gradually whisk in the milk until smooth. Cook until the mixture begins to thicken.
  4. Add the cheddar and Parmesan cheeses, stirring until melted and smooth. Season with salt and pepper.
  5. Combine the cheese sauce with the cooked macaroni. Spread the mixture into a baking dish and refrigerate until firm, about 1 hour.
  6. Once firm, cut the macaroni and cheese into bite-sized squares or use a cookie cutter for shapes.
  7. Dredge each piece in flour, dip into the beaten eggs, and coat with breadcrumbs.
  8. Heat vegetable oil in a deep skillet over medium heat. Fry the bites in batches until golden brown, about 2-3 minutes per side.
  9. Transfer to a paper towel-lined plate to drain excess oil. Serve warm.

Tips and Variations

  • Add cooked bacon bits or jalapeños to the macaroni mixture for extra flavor.
  • Try using different cheeses like Gruyere or mozzarella for a unique taste.
  • Bake instead of frying for a healthier alternative; place bites on a baking sheet and bake at 400°F (200°C) for 15-20 minutes.
