Ingredients:
For the Salad:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 ripe mango, peeled and sliced
- 4 cups mixed greens (spinach, arugula, or your choice)
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup feta cheese (optional, for garnish)
- 1/4 cup toasted almonds or walnuts (optional, for crunch)
For the Dressing:
- 3 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon honey or maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions:
Grill the Chicken:
Preheat your grill or grill pan over medium-high heat. Rub the chicken breasts with olive oil, salt, and pepper. Grill the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Let the chicken rest for a few minutes before slicing it into thin strips.
Prepare the Salad:
While the chicken is grilling, prepare the salad. In a large bowl, combine the mixed greens, sliced mango, cucumber, red onion, and fresh cilantro. Toss gently to combine.
Make the Dressing:
In a small bowl or jar, whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and pepper. Adjust the sweetness or tanginess by adding more honey or lime juice, depending on your preference.
Assemble the Salad:
Once the chicken is ready, add the sliced chicken to the salad. Drizzle the dressing over the top and toss everything together until well-coated.
Garnish and Serve:
Top the salad with crumbled feta cheese (if using) and toasted almonds or walnuts for added crunch. Serve immediately and enjoy!
Tips:
- Customize: Add other fruits like avocado or strawberries for extra flavor. You can also use grilled shrimp or tofu instead of chicken for a different protein.
- Meal Prep: Prepare the dressing and grill the chicken ahead of time, then assemble the salad when you’re ready to eat.
- Make it Vegan: Skip the feta cheese and replace the honey with maple syrup for a vegan option.
