Ready in just 15 minutes, Easy Shrimp Scampi will quickly become one of your go-to recipes.

Ingredients:

  • 1 lb (450 g) large shrimp, peeled and deveined

  • 4 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1/2 cup dry white wine (or chicken broth)

  • 1 tablespoon fresh lemon juice

  • 1/2 teaspoon red pepper flakes (optional)

  • Salt and pepper, to taste

  • 1/4 cup freshly chopped parsley

  • 8 oz (225 g) pasta (spaghetti or linguine works best)

  • Zest of 1 lemon (optional, for extra flavor)

Instructions:

1. Cook the Pasta:
Start by cooking your pasta according to the package instructions. Once done, reserve 1 cup of pasta water before draining. This will help bring the sauce together later.

2. Sauté the Shrimp:
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp, season with salt and pepper, and sauté for 2-3 minutes on each side, until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

3. Make the Sauce:
In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant. Pour in the white wine (or chicken broth) and lemon juice, scraping up any bits from the bottom of the skillet. Let it simmer for 2 minutes to reduce slightly.

4. Combine the Shrimp and Pasta:
Return the cooked shrimp to the skillet, along with the cooked pasta. Toss everything together, adding reserved pasta water a little at a time until the sauce reaches your desired consistency. If you like extra heat, sprinkle in red pepper flakes.

5. Finish and Serve:
Stir in the chopped parsley and lemon zest (if using). Taste and adjust seasoning with more salt, pepper, or lemon juice if needed. Serve immediately, garnished with extra parsley or grated Parmesan cheese, if desired.

Tips:

  • For a richer sauce: Add a splash of heavy cream for a creamy version of shrimp scampi.

  • Customize with veggies: Add spinach, asparagus, or cherry tomatoes for a veggie-packed version of the dish.

  • Make it spicy: Adjust the amount of red pepper flakes to your taste.

This Easy Shrimp Scampi is bursting with flavor and sure to impress your family and friends. With minimal ingredients and prep time, it’s the perfect dish when you’re short on time but craving something rich and satisfying. Enjoy!
