3 garlic cloves, minced

1 small onion, finely chopped

1 cup cherry tomatoes, halved

4 cups vegetable or chicken broth

½ cup heavy cream or full-fat milk

½ cup grated Parmesan cheese

2 cups baby spinach (optional)

Step 1: Sauté Aromatics
In a large pot or deep skillet, heat olive oil over medium heat. Add the garlic and onion, sautéing for 2–3 minutes until fragrant and soft.
Step 2: Add Everything In
