When you’re short on time and energy, this one-pot pasta recipe delivers maximum flavor with minimal cleanup. Creamy, comforting, and endlessly adaptable, it’s a lifesaver for hectic weeknights.


Ingredients

  • 12 oz (340 g) pasta (penne, fusilli, or spaghetti)

  • 1 tablespoon olive oil

  • 3 garlic cloves, minced

  • 1 small onion, finely chopped

  • 1 cup cherry tomatoes, halved

  • 4 cups vegetable or chicken broth

  • ½ cup heavy cream or full-fat milk

  • ½ cup grated Parmesan cheese

  • 2 cups baby spinach (optional)

  • Salt and black pepper to taste

  • Fresh basil or parsley for garnish


Step 1: Sauté Aromatics

In a large pot or deep skillet, heat olive oil over medium heat. Add the garlic and onion, sautéing for 2–3 minutes until fragrant and soft.


Step 2: Add Everything In

Add the pasta, cherry tomatoes, and broth directly into the pot. Bring to a boil, then reduce heat to medium-low. Stir occasionally to prevent sticking.


Step 3: Cook Until Tender

Simmer uncovered for 10–12 minutes, or until the pasta is al dente and most of the liquid is absorbed. Stir in the cream and Parmesan cheese. If using spinach, add it now and cook for 1–2 more minutes until wilted.


Step 4: Serve and Enjoy

Season with salt and pepper. Serve hot, garnished with fresh herbs and extra Parmesan if desired.
