They’re healthy, satisfying, and easy to customize with your favorite toppings.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil (for grilling the chicken)
- Salt and pepper, to taste
- 1 ripe avocado, mashed
- 1/4 cup plain Greek yogurt (or sour cream)
- 1 tablespoon lemon juice
- 2 cups fresh spinach leaves
- 1/4 cup shredded mozzarella cheese (optional)
- 4 whole wheat or spinach wraps
- 1/4 cup red onion, thinly sliced (optional)
- 1/2 cucumber, sliced (optional)
- Fresh cilantro, for garnish
Instructions:
Grill the Chicken:
Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper, then brush them with olive oil. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked. Remove from heat and let it rest for a few minutes before slicing it into thin strips.
Prepare the Avocado Sauce:
In a small bowl, mash the avocado with a fork until smooth. Stir in the Greek yogurt, lemon juice, and a pinch of salt and pepper. Mix well to create a creamy dressing. If you prefer a creamier texture, add a bit more yogurt.
Assemble the Wraps:
Lay the wraps flat on a clean surface. Spread a generous amount of the creamy avocado mixture over the center of each wrap. Top with fresh spinach leaves, sliced grilled chicken, and optional toppings like shredded mozzarella cheese, red onion, and cucumber.
Wrap It Up:
Fold in the sides of the wrap and then roll it tightly from the bottom up to enclose the fillings. Repeat with the remaining wraps.
Serve:
Slice the wraps in half and garnish with fresh cilantro. Serve immediately with a side of your choice, such as a simple salad or baked sweet potato fries.
Tips:
- Add Protein: If you want more protein, you can also add hard-boiled eggs or chickpeas.
- Customize: Feel free to swap out the spinach for other greens like arugula or lettuce. Add tomatoes, bell peppers, or olives for extra flavor.
- Meal Prep: These wraps are perfect for meal prepping! Prepare the chicken and avocado sauce ahead of time, and assemble the wraps when you’re ready to eat.
