Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro, chopped
  • 4 large flour tortillas
  • Salt and pepper, to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. In a large bowl, combine shredded chicken, diced avocados, cherry tomatoes, black beans, and red onion.
  2. Add lime juice, cilantro, salt, and pepper to the bowl. Gently toss the ingredients to mix well, being careful not to mash the avocados.
  3. Lay out the flour tortillas on a flat surface. If using, sprinkle a little cheese in the center of each tortilla.
  4. Spoon the chicken and avocado mixture evenly onto each tortilla.
  5. Fold in the sides of the tortilla, then roll it up tightly to form a burrito.
  6. For a warm burrito, place each one on a skillet over medium heat, seam side down, and cook for 2-3 minutes on each side until golden brown.
  7. Remove from heat, slice in half if desired, and serve immediately.
