Homemade Chocolate Caramel and Pecan Turtle Clusters

If you’re looking for a sweet and irresistible treat, these Chocolate Caramel and Pecan Turtle Clusters are sure to hit the spot! With a perfect balance of crunchy pecans, rich caramel, and smooth chocolate, they are a delightful addition to any dessert menu or holiday platter.

Ingredients

  • 2 cups of pecan halves
  • 1 cup of granulated sugar
  • 6 tablespoons of unsalted butter
  • 1/2 cup of heavy cream
  • 1/4 teaspoon of salt
  • 8 ounces of semisweet or dark chocolate (chips or chopped)
  • 1 teaspoon of vanilla extract

Instructions

  1. Prepare the Pecans: Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet and toast them in the oven for about 8-10 minutes until fragrant. Keep an eye on them to prevent burning. Let them cool on a wire rack.
  2. Make the Caramel: In a heavy saucepan, combine the granulated sugar and unsalted butter over medium heat. Stir constantly until the mixture reaches a golden brown color.
  3. Carefully add the heavy cream and salt to the mixture (it will bubble vigorously). Stir continuously until smooth. Remove from heat and let the caramel cool slightly. Stir in the vanilla extract.
  4. Assemble the Clusters: Line a baking sheet with parchment paper. Arrange small piles of pecans (about 3-4 per pile) on the parchment.
  5. Spoon a generous amount of caramel onto each pecan pile, making sure the caramel covers them well. Allow the caramel to set for about 10 minutes.
  6. Melt the Chocolate: In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring in between, until completely smooth. Alternatively, you can use a double boiler.
  7. Spoon or drizzle melted chocolate over each cluster. Allow them to cool at room temperature or place them in the refrigerator to speed up the setting process.
  8. Once the chocolate has set, store your Chocolate Caramel and Pecan Turtle Clusters in an airtight container for up to two weeks.

Serving Suggestions

These turtle clusters are perfect for gifting during the holidays or serving as a sweet treat after dinner. Pair them with a glass of milk or a cup of coffee for the ultimate indulgent experience.

Tips and Variations

For a twist, try adding a sprinkle of sea salt to the chocolate before it sets for a sweet-salty contrast. You can also experiment with different types of chocolate or nuts to suit your taste preferences.
