How to Make Strawberry Rhubarb Jam

  1. Add strawberries, rhubarb, allulose, water, lemon juice, and salt to a 3-quart saucepan.
  2. Heat over medium heat for 6 minutes, stirring every 30 seconds.
  3. Reduce the heat to medium-low when the liquid begins bubbling.
  4. Simmer for 12 minutes, stirring every 1 to 2 minutes.
  5. Mash the softened fruit until small pieces remain.
  6. Simmer for 7 to 17 additional minutes, stirring frequently near the end.
  7. Remove from heat when a spoon drawn across the pan leaves a trail for 2 seconds.
  8. Cool in the pan for 15 minutes.
  9. Transfer to a clean 2-cup jar and cool uncovered for 30 minutes.
  10. Seal and refrigerate after the jar is no longer hot.
