  • Olive oil – 1 tbsp

  • Salt – ¼ tsp

  • Water – 2-3 tbsp (to achieve desired consistency)

For the Tacos:

  • Corn tortillas – 8 small (or flour tortillas, if preferred)

  • Shredded lettuce – 1 cup

  • Diced tomatoes – 1 cup

  • Red onion – ½ small, thinly sliced

  • Fresh cilantro – For garnish

  • Lime wedges – For serving


Step 1: Prepare the Lentil Filling
