Ingredients

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning mix
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups beef or chicken broth
  • 8 ounces pasta shells or rotini
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Transfer the cooked beef to your slow cooker. Add the taco seasoning, diced tomatoes with green chilies, corn, black beans, and broth. Stir to combine.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours.
  4. About 30 minutes before serving, stir in the pasta. Cover and cook until the pasta is tender.
  5. Once the pasta is cooked, stir in the shredded cheddar cheese until melted and creamy.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve warm, topped with your favorite toppings such as sour cream, cilantro, or jalapeños.
