Small Batch Sugar-Free Fig Jam Recipe (No Pectin)

This small-batch fig jam turns ripe figs into a thick refrigerator spread without pectin or added sugar. It is not a shelf-stable canning recipe.

Sugar Free Fig Jam Without Pectin

Fresh figs naturally soften and thicken as their moisture reduces. Lemon balances their sweetness, while allulose supports a smooth texture without using traditional granulated sugar.

  • Prep time: 10 minutes
  • Cook time: 25 to 30 minutes
  • Cooling time: 45 minutes
  • Yield: About 1 1/2 cups
  • Storage: Refrigerator or freezer only

The title describes a no-added-sugar recipe. Figs naturally contain sugar, so include the fruit when tracking total carbohydrate or blood glucose.

Chopped figs, allulose, lemon juice, water, cinnamon and salt
Use ripe, sound figs and measure every ingredient before heating.

Ingredients

  • 4 cups ripe fresh figs, stemmed and chopped into 1/2-inch pieces, about 24 oz
  • 1/3 cup granulated allulose sweetener
  • 1/3 cup water
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon fine sea salt

How to Make Sugar Free Fig Jam

  1. Wash the figs, remove every stem, and cut the fruit into 1/2-inch pieces.
  2. Add figs, allulose, water, lemon juice, cinnamon, and salt to a 2-quart saucepan.
  3. Heat over medium heat for 5 minutes, stirring every 30 seconds.
  4. Reduce to medium-low when the mixture begins bubbling.
  5. Simmer for 20 to 25 minutes, stirring every 1 to 2 minutes.
  6. Mash the softened figs with a potato masher after 15 minutes.
  7. Remove from heat when a spoon drawn across the pan leaves a trail for 2 seconds.
  8. Cool for 15 minutes, then transfer to a clean 2-cup jar.
  9. Cool uncovered for 30 minutes before sealing and refrigerating.

Stir frequently near the end because the thick mixture can catch on the pan.

Check the cooled texture

The hot jam should remain slightly loose. It becomes thicker after cooling, so stop when the fruit holds softly on the spoon instead of cooking it dry.

Visible fig seeds and a soft spreadable set are expected.

Storage and Serving

  • Refrigerate the cooled jam in a sealed clean jar for up to 10 days.
  • Freeze in a freezer-safe container for up to 3 months, leaving 1/2 inch of headspace.
  • Thaw overnight in the refrigerator and stir before serving.
  • Discard jam with mold, bubbling, leakage, or an off smell.
  • Do not process this formula in a water-bath canner.

Sugar Free Fig Jam FAQ

Can I use frozen figs?

Yes. Thaw 24 oz of figs in the refrigerator, include the released juice, and expect 3 to 5 additional minutes of simmering.

Why is my fig jam too thick?

Stir in 1 tablespoon hot water at a time until the cooled jam reaches a spreadable consistency.

Can I double the batch?

Use a wider 4-quart pan and expect a longer reduction. Do not double the batch for canning because this formula is refrigerator-only.
