Ingredients

  • 2 cups ripe diced mango, 12 oz
  • 2 tbsp water
  • 1 tbsp fresh lime juice
  • 2 tbsp chia seeds
  • 1 to 2 tsp granulated monk-fruit sweetener, optional
  • 1/8 tsp kosher salt

How to Make Mango Chia Jam

  1. Add mango, water, lime juice, and salt to a small saucepan.
  2. Cook over medium heat for 5 minutes, stirring every 30 seconds.
  3. Mash until about half the mango is smooth and half remains chunky.
  4. Remove from heat and stir in chia seeds for 30 seconds.
  5. Taste after cooling 2 minutes; add monk-fruit sweetener only if needed.
  6. Rest 10 minutes, stir again, and transfer to a clean 12-oz jar.
  7. Cool uncovered for 20 minutes, seal, and refrigerate.
